Hospitality is a performance in which the best work is invisible. By the time the first guest arrives, the real evening has already happened.
It starts at dawn — produce chosen while the markets are still stacking crates, spices ground for the day rather than the season. What the guest later tastes as freshness is really a series of small refusals: no shortcuts, nothing made before it must be.
Through the afternoon, the venue is dressed the way a stage is set. Tables squared, linens smoothed, every place setting measured by hand-width. The buffet line is walked end to end as a guest would walk it, and rearranged until the path feels obvious — hospitality begins with never letting a guest feel lost.

Service itself is choreography. Staff are briefed by name and station; who carries, who clears, who watches the elders' tables. The good server appears exactly when needed and otherwise does not exist. Warm food arrives warm, quietly, and the water glass is never empty.
When the evening ends and the hosts finally sit, that is the last act of service: leaving behind a family with nothing to manage — only a celebration to remember.
